Vibe Cafe shakes up vegan food in Hilo

One of its menu items, the beet poke bowl, looks almost identical to an ahi poke bowl. This is by design; Vibe aims to provide vegetarian and vegan options of beloved foods that typically have meat in them. The cafe also serves vegan eggs benedict, loco moco, and nachos.

Because Vibe has so many regular customers, its menu changes regularly. The menu items are often created by the employees themselves. If the chefs or front-of-store employees think of a food that they’d like to make vegan, they can create it.

On Fridays from 8 p.m. to 12 a.m., Vibe also holds “After Hours,” where artists and musicians can come and exhibit their talent to the restaurant-goers.
