Top Chef Finalist Sheldon Simeon shares Hawaiian cooking in new book

Two-time Top Chef finalist Sheldon Simeon just recently published Cook Real Hawaii, a cookbook that can help you make all your local favorites.
Whether you live here in the islands, or you’re just looking to share a piece of home and make modern Hawaiian food more approachable, the cookbook is a perfect addition to any kitchen. Today, the hosts will be trying out Chef Simeon’s recipe for Chocolate Birthday Cake Butter Mochi Butter mochi.
Recipe: Chocolate Birthday Cake Butter Mochi by Chef Sheldon Simeon
12 tablespoons of butter (1.5 sticks cut into chunks)
1 cup semisweet chocolate chips
2 cups granulated sugar
3 large eggs
2 teaspoons vanilla extract
12 oz can evaporated milk
13.5 oz can full-fat coconut milk
3 cups mochiko
1 tablespoon baking powder
1/4 cup unsweetened cocoa powder
Frosting and topping:
1 cup creamy peanut butter
1 cup demerara or turbinado sugar
1/4 cup Pop Rocks candy (optional)
