Pizza Mamo brings Detroit and Brooklyn-style pizza to the islands

Every year, National Pizza Day takes place on February 9. So if you need an excuse to grab a slice, look no further! HI Now host Kanoe Gibson is at Pizza Mamo in downtown Honolulu to see the difference between its Detroit and Brooklyn-style pizzas.

Pizza Mamo got its start during the pandemic. As the focus of the food industry turned away from social gatherings to primarily convenience and take out, the owners felt there was a need to offer an elevated product that would travel well and be enjoyed in peoples homes. Thus Pizza Mamo was born, offering pizza made with the best ingredients available, while still offering fast and easy take out.

It’s the care that goes into a pie and the way ingredients are sourced that sets Pizza Mamo apart from other pizza joints.

“We take our dough making seriously,” says partner Matthew Resich. “We do a 72 hour fermentation on the Brooklyn, and the Detroits go through a multiple rise process. We also import the best flour we can get from the US, same for California tomatoes, Wisconsin cheeses, and Ohio pepperoni.”

However, Resich stresses that if there’s a local option to source from, Pizza Mamo will always choose that first.

“Our cherry tomatoes for toppings are from Ho Farms, our pork is from Waianae, lamb from the Big Island, but quality of ingredients is our focus,” he adds.

So why the name Pizza Mamo? The Mamo Bird was special because of its significance in Hawaiian culture. It was an honored bird, and its signature yellow feathers were sustainably plucked two at a time and then let go to create the capes and headdress for royalty. For the owners at Pizza Mamo, the Mamo bird represents their vision to elevate their craft and offerings to be regal.
