Head chef at Mad Bene to participate in the James Beard Foundation Taste America series
Taste America is James Beard’s dinner series in support of local, independent restaurants across the country. This year is the first time that Hawaii was chosen to be featured on the series and Executive Chef at Mad Bene, Chef Bao Tran, will be participating in the special event! Along with Chef Robynne Maii of Fête, the duo will prepare a multi-course menu that reflects their signature styles.
The inspiration for the menu comes from Chef Bao and Chef Robynne’s desire to portray local Hawaii ingredients in a unique and uncommon way. “Local ingredients, but a global style,” says Chef Bao. One of those dishes is a Spaghetti Frutti di Mare, an Italian pasta dish that features only seafood harvested in Oahu (slipper lobster, samoan crab, opihi, and ogo).
The initiative behind the James Beard Foundation Taste America is to support local restaurants across the country. With the heavy impact caused by COVID-19, Chef Bao is excited to participate in the event because over a third of the ticket sales goes struggling restaurants across America.
